There are few places in the world where you get the sense of land emerging from the ocean — where you can trace the contours of the land down below the waterline — where land and ocean are not binary or separate, but continuous. New Zealand’s Paroa Bay is one of these places — a sheltered inlet enveloped by a perfectly irregular peninsula —with the larger subtropical and iconic Bay of Islands stretching out across the horizon.
The Paroa Bay experience is continuous — from the considered architecture of our villas, through the carefully selected ingredients on our menu, to the artisanal quality of our wines, we offer an experience of complete relaxation and luxury in a truly unique and awe-inspiring setting.
Perched above this breath-taking bay is our premier luxury accommodation — Paroa Bay Winery and Estate. Our property features three superb villas, a sprawling boutique vineyard, and our world-class restaurant Sage — ensuring every aspect of a luxurious experience is not only catered to but plentifully provided for.
We do not have to look far for inspiration at Sage — our restaurant at Paroa Bay Winery. Perched high above the idyllic Bay of Islands, it is the Moana (ocean) and Whenua (land) who inform and inspire our menu. From the end of the fishing line cast into the sea to the orchard doors of our suppliers and our very own onsite gardens, our focus is on locally grown and sourced ingredients which combine seamlessly into a uniquely creative brand of New Zealand cuisine.
With a broad-ranging menu that features some of the freshest and most revered offerings from the ocean — all sustainably fished and line-caught — and some of New Zealand’s world-renowned natural produce, our chefs work to strike the perfect balance between creative flair and allowing their ingredients to be savoured as they are. And with all dishes thoughtfully matched from wines directly from our very own cellar door, the culinary experience is full-circle. It is our considered and intuitive approach that pervades the restaurant at Sage, from ingredient sourcing, through the kitchen and front of house.
In a world where sustainability matters, we’re extremely proud to know that almost every ingredient in our kitchen has come from just down the road — we even picked some of them ourselves. It is the connection between our surroundings and our menu that sets Sage apart — and when the surroundings are one of the most beautiful natural environments on the planet you can taste the difference.

In 1838 an intrepid group of missionaries from France arrived in New Zealand in the Hokianga and came to the Bay of Islands in 1839. In 1841 they built the first ‘factory’ in New Zealand with a press dedicated solely to the Māori language, right on the foreshore in the Bay of Islands.
Too poor to buy much, they built the printery using rammed earth (or pisé de terre) for the lower storey and a timber-framed (pan de bois) upper floor with earth panels – technology and knowledge brought from across the sea.
Today, the site is still run as a printery and adults and children alike can come and witness first hand every step of how early publications were made in the building. Almost two centuries after the machinery first started operation, you can enjoy the satisfaction of preserving the building, the machinery inside and all the wonderful stories connected to this place.

Many Four Square Stores are of important historical significance in the development of this country.
One such store is Russell Four Square, which is listed as a Category 2 building in the Historic Places Trust Register, (Category 2 standing for a significant place).
It is the only surviving 19th Century trading store still fulfilling it’s original purpose on the Russell waterfront.
Built in the 1880’s, the store was strangely designed. The sleeping quarters were upstairs and were reached by an outside staircase. The stairs have long gone and access is now by way of a vertical ladder onto a flat roof leading to a porch. Consequently upstairs is no longer used. The kitchen-living room was a stand-alone single storey building situated in the back yard of the shop…
